Birria Taco’s are all the rage right now. For good reason. They are absolutely scrumptious. Before we share some of the best places in Atlanta for birria tacos, lets take a look at what exactly a birria taco is.

What is a Birria Taco?

Birria tacos originate from central Mexico. It’s a very famous dish. Each city around central Mexico creates a slightly different variation of the dish.

Definition: Traditionally birria is a soup or stew consisting of chili’s and adobe goat meat along with other spices like cumin, bay leaves, garlic and thyme. These ingredients are slow cooked in a pot. Variations on the meat are lamb, beef or sheep.

The stew is served with corn tortillas, lime, cilantro and onions to finish off the dish.

In Atlanta, its harder to find traditional goat birria. Usually the restaurants are serving it with beef or lamb.

What is Quesabirria?

Quesobirria is an adaptation on the traditional birria that is becoming exceedingly popular in the United States and Atlanta. It’s very similar to classic birria, but made with marinated beef and served in tacos with delicious melted cheese. The beef usually gets a red color from the marinade.

Brief History of Birria

If you just look at the translation of the word, it means essentially “worthless.” But these tasty treats prove more than their value.

The backstory: In the 1500’s, the Conquistadors from Spain landed in Mexico and brought with them animals like goats.

After overpopulation of goats and the Spanish not particularly enthusiastic about goat meat because of its toughness, they started giving the goats to the natives of Mexico.

Through ingenuity, the locals figured out a way to make the meat not only palatable, but extremely delicious by slow cooking the meat in a pot with spices.

Their birria taco’s are served with braised lamb leg and quesofundido cheese served on a daily, homemade crispy grilled adobo tortilla. They are served with a very spicy habanero salsa, veal broth and a side of watercress salad. You can order two or three at a time. Two was plenty for me. It came with a side of rice and beans. I went with the Frijoles Charros, I think they were pinto beans (not sure) cooked with chorizo. Either way, they were delicious.
